The grapes are macerated for one month. The wine then matures for 24 months in 225 liter barrels at a constant temperature and humidity.
They use 50% Slavonian oak, 47% French Allier and 3% French Troncaise oak.
Red Carolina is a medium intense garnet red color. On the nose, the wine is elegant and mature, with noticeable aromas of cherries and cherry jam.
In the mouth, the wine is dry, juicy, with elegant ripe tannins. The character in the mouth is intense, you can detect simple and exotic spices, as well as chocolate and maturation in wood.
A very complex wine with a long aftertaste and a long life.
Pairing with food: game dishes, combining red meat with fruit sauces.
